In honor of the onset of fall, I will post a series of recipes that you will ALWAYS find at my family's get-togethers, particularly Thanksgiving. My mom & her 4 sisters are all excellent cooks and most of the recipes I get come from something that they made.
This recipe is my favorite side dish. It make a lot - which is good because I can eat this until I get sick. I LOVE it.
Potato Supreme Casserole:
2 lbs frozen hashbrowns (southern style)
1 C butter, divided
1 can cream of chicken soup
2 C sour cream
2 C shredded cheddar cheese
1 tsp salt
1/8 tsp pepper
1/2 onion (chopped)
1/2 box cornflakes or Special K
Preheat oven to 350. Pour hashbrowns into a 13x9" pan. Pour 1/2 cup melted butter over hasbrowns. In a separate bowl, mix next 6 ingredients and pour over hashbrowns. Crush 1/2 box of flakes in a ziploc bag. Pour in 1/2 cup of melted butter over flakes and mix. Then, pour over hashbrown mixture. Bake for 1 hour.
